Kitchen Experiments // Single Girl [or Guy] Sauté

Well…7 weeks strong on the anti-sugar train. And now the experiments shall begin!

A few weeks ago I made a dish with the random vegetables I had left over from the week and it was a delicious success.

I like cooking but I often feel like I’m being wasteful as I’m usually the only one eating, as a single lady. So I try to make single serving recipes or something that actually tastes good warmed up as a leftover. And this dish does!

So now I’ve recreated it based on some of my favorite vegetables. I’m not a professional, so I’ve probably done some things wrong, but the important thing is that it tastes good, is healthy, and is sugar-free. Hooray!

Single Girl [or Guy] Sauté

makes about 6 servings

Here’s what you need:
-1 tbsp coconut oil
-1 red onion, chopped
-2 handfuls brussel sprouts, quartered
-2 yellow squash, sliced into bite-size pieces
-2 cubanelle peppers, seeded and chopped
-1 zucchini, sliced into bite-size pieces
-1 handful of kale, chopped
-2 tbsp red wine vinegar
-7 oz coconut cream
-1 1/2 cups quinoa, uncooked
-Shredded parmesan, to serve
-Salt and pepper to taste

First, here is your soundtrack. My philosophy is you shouldn’t spend time in the kitchen without music. Just be careful that your dancing doesn’t get too out of line when you have the knives out. I had to learn this the hard way.

Heat coconut oil in a large pan over medium heat. Add onion and cook until it starts to sizzle and turns bright purple.

In another large pot, cook the quinoa. But first, rinse it! Use a mesh strainer to do this.

Typically you use two parts water to one part quinoa in the pot (so for 1 1/2 cups quinoa use 3 cups water), on high until it boils. Then cover the pot and simmer it, about 15 minutes. You’ll know it’s done with the wheat germ pops (it looks like a little white ring).

Let this cook while you are sautéing your veggies.

Now back to your pan of onions – Add brussel sprouts and cook for about 5 minutes.

Add yellow squash and cook for another five minutes. The brussel sprouts should start to become tender at this point. Make sure you keep stirring so nothing sticks to the bottom of your pan.

Normally I would add the zucchini at the same time as the squash, but I had already steamed the zucchini and stored it in the freezer so I’m adding it last.

Next add your peppers to the pan. Cubanelle peppers are not hot, but have a slight sweet taste to them. Plus they provide a nice crunch and are pretty!

Your squash and brussel sprouts should be tender now. Continue to cook until the peppers begin to soften, just a few minutes.

At this point I added the zucchini as I had pretty much completely cooked it before. It looks strange and wrinkly because I had previously steamed and frozen it. But it still tastes delicious!

By now your quinoa should be cooked. Make sure its not burning!

You can drain and rinse your quinoa, but I left it in the pot.

At this point, you want to add your veggies to the quinoa. I literally dumped the veggies into the quinoa pot.

Now we’re gettin weird!

Using the same pan you used for your veggies, bring the heat down a bit and add a handful of kale. Swirl about 2 tbsp of red wine vinegar in the pan. Stir it constantly. This will turn the kale bright green. Also make sure you scrap any onion/veggies that stuck to the pan previously. After a few minutes, transfer the kale to your quinoa pot.

Almost done!

Lastly, add the coconut cream to the mix. I use this brand I find at my local Whole Foods. Make sure you use unsweetened.

Just pour it over and mix the whole pot really well. You may need to melt your coconut cream first – you can do this in the microwave.

And just like that, you’re done!

Add some shredded parmesan and salt and pepper to your taste.

Now you have several more meals for the week! This is a dish that does taste good when it’s warmed up.

You can substitute/add/remove veggies to your preference. Enjoy!

Day Twenty Seven

Halfway point, y’all!

I had two eggs with sprouts, salsa, and avocado with toast for brunch at Frothy Monkey in Franklin, Tennessee. Soooooo good.

How about that acceptance speech from Lupita Nyong’o? So lovely and inspiring. “No matter where you’re from, your dreams are valid.” Amen.

Day 26

I went to Pei Wei with some coworkers one day for lunch and this was literally the only thing I could find on the menu that didn’t have sugar: edamame and vegetable spring rolls. Most of their entrees have an insane amount of sodium and sugar. Now that I’m diligent with checking nutritional info, I’ve been very surprised at how unhealthy a lot of restaurant meals are – especially the things I was eating because I thought they were healthy!

I made this tasty creation with veggies I had left over at the end of the week so I wouldn’t be wasteful. Brussel sprouts, kale, squash, onion, quinoa, garlic, and parmesan.

Starting week five of kicking my sugar habit and I can already tell a huge difference. I feel so much better. My mind feels clearer. And I’m sleeping better!

I’ll try to do better about posting meals daily going into the second half of this detox.

Day Sixteen

Is it Friday yet?

This afternoon was difficult. My mood was in full swing. I’m about two and a half weeks into this thing and just when I think I’m fine and have my sugar addiction beat, detox symptoms remind me I’ve still got a ways to go.

For breakfast today I had a morning take on bruschetta and it was delicious.

For lunch I had a buffalo chicken salad from Which Wich. I was so pumped to find out one of my favorites for lunch is sugar free!

Dinner was another story. Stuffed eggplant. I did not like it and it didn’t turn out right either. Which is why it’s in a bowl and looks like this:

Thankfully I had also made some cheesy biscuits that I snacked on. Made from almond flour, coconut flour, and delicious cheddar cheese!

And my current favorite thing, coconut oil. I cook with it and I straight up eat it by the spoonful out of the jar. Delicious. I really like this Harvest Bay coconut oil I found at Whole Foods!

I wrapped up my day by taking a long walk and enjoying the sunset. I too often forget how good it feels to be alone surrounded by nature. It is seriously healing!

Day Fifteen

#sweatpants

That just feels like the appropriate way to start this off. And yes, I am writing this in sweatpants. If you’re tuning in late, read this first. This weekend was crazy busy. And thus, no pictures. Except for this one:

This was Sunday’s lunch at Mellow Mushroom in Franklin. Thai Dye. Lots and lots of veggies and curry chicken.

I also ate:
-Yogurt
-Chicken Tenders
-Steak Tacos
-Blackberry Chicken Pizza (oops, two pieces of fruit [if we’re being honest I also ate four raspberries])
-Eggs on Toast
-French Dip (work lunch at McAlister’s and this was the only thing on the menu that didn’t have sugar!)

Monday. I can’t explain it, but I woke up before my alarm this morning and didn’t go back to sleep. I got ready for my day and watched an episode of Parks and Rec. This is unheard of for me!

And I did not like dinner. So I ended up eating the cheese and some leftover meatballs. Thankfully I have lunch plans tomorrow so I will not have to eat this again. I think it’s probably just too weird of a combination and I definitely don’t like lentils. Oh well. You live and you learn!

I am noticing that my head feels a lot clearer and I seem to be more alert, especially in the afternoons.

The sweets at work continue to be a temptation!

Day Eleven

I was terrible at taking pictures today. Sorry.

I had Coconut and Almond Yogurt for breakfast – sans fruit.

Chipotle for lunch – steak tacos.

And these puppies have been doing work since Monday. Fermented cucumbers. My first time experimenting with fermentation. They are pretty dang good!

Tonight I had a deconstructed hamburger: beef, arugula, carrot, avocado, onion, fermented cucumber, and feta. I wasn’t sure if I would like this, but I was pleasantly surprised.

Also, I need to share this because it’s just too cute. I really wanted to buy one, but I resisted because I’m an adult.

Day Ten

Ten days into this anti-sugar saga. I’m kind of impressed with myself.

Still sick. Another short and sweet post.

I barely rolled myself out of bed in time for work this morning. I didn’t eat breakfast. Bad, I know.

For lunch I had a Pork & Fennel Meatball sub.

For dinner, I first made Dukkah. It’s an Egyptian dish/mix of nuts and spices. Man, I wish this blog had a smell feature. This stuff smells like heaven.

I used the Dukkah to coat chicken thighs that I baked. So yummy! And lots and lots of green vegetables.

Can I just say how happy I will be when Valentines Day passes? This sits on my desk and taunts me all day long. Not cool.

Day Nine

Annnnddddd I’m sick. Stupid head cold.

I still ate well today though, so I’m pretty proud of myself. Typically when I feel this bad I would turn to ice cream. But not today.

For breakfast I had a Toastie with Avocado & Cheese. Delicious.

Lunch was leftover Roasted Chook from last night. It still had a lot of flavor today and was pretty filling.

Then after a much needed nap, I made myself get up and work on Pork & Fennel Meatballs. Seriously the best pasta dish I think I’ve ever had…and I once spent half a year in Italy. I know good pasta!

I hear an early bedtime calling my name! And maybe some warm chamomile tea.

Day Eight

I’ve been a mess today.

I know part of me is tired from moving into a new place over the weekend. And part of it is that it is Monday and it is always hard to get back into the swing of things come Monday morning. And I think part of it is the sugar detox. It sucks.

So I’ve been on edge all day, extremely irritable, and overly emotional. All kinds of uncomfortable things. And I have been thinking about Nutella for hours. What the heck!

My new kitchen is still a mess and I can’t find things, but I’m hoping as the week goes on and I put things away I’ll get back into the swing of things and be excited about cooking new things.

For breakfast I had a jar of Coconut and Almond Oats – sans fruit.

For lunch I had to pick something up because I didn’t have a chance to make anything yesterday. So I went to Jimmy John’s which was nearby and ordered the Beach Club sans mayo and opted for the 7-grain bread. I tried to find good nutritional info for Jimmy John’s and while they have some listed on their website, I have no idea what is actually in their bread. I’m hoping there is little to no sugar, but I don’t know for certain. I’m definitely taking my lunch with me to work the rest of this week!

Then this afternoon the chocolate cravings began, probably because of how stressed out I felt. When I got home from work I tried to put away a few boxes in my kitchen and then I made this beautiful creation:

Roasted Chook and Squash. So pretty and colorful and so many flavors! But I found myself still hungry afterwards, and still craving something chocolate-y. Sigh. It’s just been one of those days. I’m going to wash some dishes and then call it a night.

Tomorrow, please be better.

Day Six & Day Seven

This weekend has crushed me. I am beyond exhausted. I only took one picture of food. I’ll do better next week, I promise. I’m too tired to even write a real post, so here’s a list:
